Nose:

Rich caramel, spicy nutmeg, candied apple, vanilla bean, Big Red gum, and peach ice cream. 

Palate: 

Molasses, apple pie, lemon pound cake, cardamom, allspice, and licorice. 

Finish:

Long finish with butterscotch, licorice, and cinnamon.

Found North Cask Strength Whisky is bottled by Redhook Distillers based in Brooklyn, NY. Batch 002 is a 129.8 proof Canadian whisky made of 80% corn, 19% rye, and 1% barley, carrying a 16 year age statement (blend of 16-20 year whisky!). On the nose, you can already tell that this is a well-aged non-chill filtered whisky by the richness of the aroma. Thick caramel, crème brûlée, and spicy cinnamon are at the forefront, followed by hints of peaches. The palate builds off of the nose with some apple pie and lemon pound cake. The whisky has a long finish that leaves you with touches of cinnamon, but predominantly a nice rich butterscotch. Overall, this is a great whisky that checks all of the boxes. Found North provides full transparency about the source of the whiskey, grain profile, age, and more, which is exactly what I’m looking for in a premium-priced bottle. On top of that, they provide a full flavor breakdown on their website for each batch, which gives great insight to where each flavor and aroma comes from. The whisky brings richness and depth of flavor that you would expect in a 16 year product, and is certainly one to check out.
