Nose:

Brioche bread, powdered sugar, nutmeg, oatmeal cookies, and lemon pith. 

Palate: 

Heavy oak, dark honey, nougat, subtle cherry, Frosted Cheerios, and walnuts.

Finish:

Medium-long with building cinnamon spice, caramel, and light smoke.

Final Thoughts:

The Toasted Series from Penelope takes their standard four grain bourbon, and finishes it in a new toasted barrel. Each batch offers a different blend of their three bourbon mash bills, with varying age ranges, to form the four grain finished product. This specific bottle is a heavy toast with barrel char 2, and 5-6 year age statement. It probably goes without saying, but the secondary aging in a toasted barrel has a major impact on the whiskey. There is a heavy oak presence on both the nose and palate, which turns into a spicy cinnamon note on the finish that builds on the back of your tongue. On the other hand, the toasted barrel also brings deliciously sweet notes of buttered brioche bread and Frosted Cheerios. Overall, this whiskey is a great addition to the Penelope lineup that takes their standard cask strength and adds a bit more sweetness and complexity.
