Nose:

Lavender, dark honeycomb, cherry, raspberry, corn bread, green tea, and allspice.

Palate: 

Rich honey, wildflower, cherry pie, Butterfinger bar, oak, and black tea.

Finish:

Medium-long with honey, mint, leather, floral note (can’t place the flower), and cinnamon chai tea.

Final Thoughts:

Prior to tasting this Good Times Bourbon, I had never heard of Whiskey Thief Distilling out of Frankfort, KY, nor had I tried many whiskies finished in honey barrels. However, I can always get behind a cask strength, non-chill-filtered whiskey sourced from MGP! Immediately upon opening the bottle, the honey finish is apparent in the best way possible. Rich honeycomb and wildflowers dominate the nose with a subtle green tea backbone. The palate brings cherry pie and creamy chocolate notes that when combined with the honey, reminds me of a Butterfinger candy bar. A wonderful floral and mint note are present on the finish, along with spicy cinnamon chai tea. Overall, I could not have been more impressed with this bourbon. The honey barrel finish added a dark sweetness that elevated what was already an intense and flavor bourbon. Perhaps what was most intriguing was the floral note that created a perfect counter-balance to the honey. If you haven’t tried any Good Times products before, I would highly recommend the honey finished bourbon as a great starting point.
