Nose:
Heavy oak, molasses, cinnamon coffee cake, butterscotch, leather, and maple.
Palate:
Toffee, French toast, cinnamon roll, overripe strawberries, and light mint.
Finish:
Long finish with molasses, oak, and maple candy.
Final Thoughts:
With their inaugural single barrel release, Found North Whisky has created a new spin on a single barrel program. The first step in their process was to create a blend of three distinct Canadian whiskies, including 50% 12 year rye, 20% 19 year rye, and 30% 21 year corn. This blend was then emptied into 18 different barrels of varying char levels and wood types to create 18 unique single barrels (quite the process). Barrel 001 is a level #3 charred new American oak, which is what you would typically use for a standard bourbon/rye. Before you can even get the glass to your nose, you can already smell the intense oak, which isn’t a surprise considering half of the blend is 19+ years old. The oak is complimented throughout the pour with a heavy dose of molasses, leather, overripe strawberries, and what I can only describe as the gooey middle of a cinnamon role. Overall, this is everything that a fan of aged whiskey could want… tons of oak, uncut, unfiltered, and a single barrel expression. I’ll definitely be keeping an eye out for what they do with those other 17 barrels!
