Final Thoughts:
Whiskey Thief Distilling Company sources their whiskey from MGP, and finishes their products in a wide array of barrels. This straight rye whiskey is finished in former honey barrels, which leaves a definitive mark on the entire tasting experience (in a great way!). The nose begins with a sweet pop of honey as you might expect, as well as an intense apple aroma that reminded me of Apple Jack’s cereal. The palate stays consistent with the nose, bringing forward wonderfully sweet honey, candied lemon, and a distinct sweet tea taste. The whiskey lingers on the palate with a nice lemongrass and hibiscus note to round out all of the flavors. Overall, this whiskey is very enjoyable for those who prefer a sweeter drink. There is a lot of sweetness coming from the apple forward rye, and obviously the honey barrels, but the high proof helps to bring a good balance to the pour. I personally lean more towards their bourbon finished in honey barrels, but this is certainly a bottle I’m happy to pour in my glass.
