Nose:

Marshmallow fluff, light ethanol, raspberry jam, Honey Bunches of Oats cereal, and almonds. 

Palate: 

Vanilla ice cream topped with caramelized apples, nutmeg, heavy oak, and almond cookies. 

Finish:

Mint sweet tea, buttery croissant, and cherry. 

Final Thoughts:

Found North Batch 003 is a 110.2 proof blend of 5 whiskies made of 64% rye, 32% corn, and 4% malted barley. This 17 year Canadian rye consists of an 18 year rye aged in tequila barrels, an 18 year rye aged in Speyside scotch barrels, a 21 year corn whiskey aged in American oak, a 17 year rye aged in Hungarian oak, and a 25 year corn whiskey aged in Hungarian oak. Needless to say, Found North is extremely transparent when it comes to the components of their whiskey, which makes the whiskey nerd in me very happy! This rye from beginning to end gave off a lot of dessert vibes that I really enjoyed. It wasn’t dark chocolate like you might expect to find in some higher aged whiskies, but rather a deep richness coming from the grains used in the mash bill. Almond cookies, buttery croissant, and Honey Bunches of Oats cereal pretty much sums up my tasting experience. Of course there are additional notes of baking spice coming from the extended aging, and apple coming from the rye, but overall the star of the show was the sweet pastry notes. Once again, another standout batch from the folks at Found North!
