Bourbon Pumpkin Bread
Bread Ingredients:
1 3/4 cup flour
1 cup sugar
1/2 cup light brown sugar
1 tsp baking soda
pinch of salt
2 tsp pumpkin pie spice
3/4 cup pumpkin puree
1 tsp vanilla extract
2 eggs
1/2 cup vegetable oil
1/3 cup water
Icing Ingredients:
+/- 1 cup of powdered sugar
4 tbsp butter
1/4 cup of bourbon
chopped walnuts (optional)
Directions:
Preheat oven to 350 degrees.
Mix flour, sugar, light brown sugar, baking soda, salt, and pumpkin pie spice in a large bowl.
Add pumpkin puree, vanilla extract, eggs, vegetable oil, and water. Stir until just combined.
Pour the batter into a greased loaf pan and bake for 45 - 55 minutes or until a toothpick comes out clean.
Once the bread has cooled completely, make the icing by melting the butter and mixing in the powdered sugar and bourbon.
Pour the icing on top and optionally top with chopped walnuts.
I prefer my icing to be on the “boozy” side since there is no bourbon in the bread. For this recipe, I went with Evan Williams Bottled-in-Bond for the value, 100 proof, and slight nutty flavor that Heaven Hill is known for. Any bourbon will do, just remember that the bourbon isn’t cooked at all, so make sure it is one that you like to drink as well!
