Willett Distillery (sourced from unknown distillery)

Nose:

Grass, pine nuts, black pepper, raw honey, vanilla, molasses cookies and rubber. 

Palate: 

Allspice, butterscotch, cinnamon, and gingersnap cookies. 

Finish:

An oily finish with notes of dill, cinnamon Red Hots, and cocoa powder. 

Final Thoughts:

Noah’s Mill is one of the standard offerings from Willett Distillery coming in at 114.3 proof, and consisting of a blend of sourced whiskies from an undisclosed distillery. In the past, I have thoroughly enjoyed the rye whiskey coming out of Willett, but have been a bit hit-or-miss on the bourbons. The nose begins with a strong aroma of freshly cut grass and pine nuts, along with a strange rubber note on the back-end. Strangely enough, the only other whiskey that I have experienced this rubber note is the Old Bardstown Bottled in Bond (also from Willett). The palate significantly improves with a pleasant balance of gingersnap cookies and butterscotch, before transitioning into a very oily finish with dill and cinnamon. Overall, I found this bourbon to simply have too many herbaceous and dill-forward notes that did not work for me. At this price point, I would grab a Willett 4-year rye over the Noah’s Mill.
