La Palma Geisha Corvus Coffee

The Basics: 

Corvus Coffee Roasters

Origin: Columbia

Processing: Lactic 

Brewing Method: Chemex with 50g of coarsely ground coffee to 700g of water

Nose:

Pomegranate, cranberry, cherry herbal tea, strawberry Toaster Strudel, and sourdough bread. 

Palate: 

Creamy, herbal tea, pomegranate, acidic/citrus punch 

Finish:

Tart, toasted raisin bread with butter, toasted almond, pine nut, and juniper. 

Final Thoughts:

La Palma Geisha is part of the Corvus Coffee Roasters’ reserve series. To craft this coffee, the whole cherries are buried in clay pots, which allows them to ferment and create a buildup of lactic acid. This process completely transforms the final beans into a very citrus and fruit forward coffee unlike a traditionally roasted bean. Both the nose and palate are laden with pomegranate, cherry, herbal tea, and even a hint of a strawberry Toaster Strudel fresh out of the toaster. The finish then rounds out with toasted bread and pine nuts. La Palma Geisha creates an exceptional cup that is perfect in the morning to wake you up with a kick of citrus and fruit you won’t find in many other coffees.
