Nose:

Lemon zest, cranberry, apples with cinnamon, roasted chestnut, and floral.

Palate:

Tart cranberry, lemon, passion fruit, pineapple, and tannic.

Finish:

Dark chocolate, macadamia nuts, and dried apricot.

Final Thoughts:

This Guacanas coffee from Corvus Coffee Roasters is part of their exotic series. The Caturra Rojo coffee cherries are fermented in three different stages, which includes 50 hours of anaerobic, 70 hours of aerobic, and 70 hours of fermentation in the middle of the drying process. On the nose, it is apparent that this is not your typical cup of coffee. Bright citrus, cinnamon apples, and even a subtle floral aroma pop from the glass in a really nice way. The palate follows through with additional tropical fruit notes and a punch of tart cranberry. To wrap it all up, the finish turns slightly in a different direction by incorporating some chocolate and roasted nut notes, providing a nice contrasting balance. As if it wasn’t apparent already, Corvus Coffee Roasters is very passionate about coffee, and willing to experiment with their beans in ways I could have never imagined. This allows them to create truly delicious and exciting cup of coffee unlike anything else I’ve tried before.
